Low Carb / Dairy Free Zupa Toscana Soup

With the cold weather coming in I wanted a soup that would fit in my macros but also taste amazing.


Ingredients

  • Italian turkey sausage

  • 3 pieces of bacon cooked and chopped

  • 2 turnips - peeled and diced

  • Half a bunch or kale roughly chopped

  • 1 tsp minced garlic

  • 1 onion diced

  • 1 tsp Italian seasoning

  • 1 can coconut milk

  • 2 cups chicken broth

Directions

  1. Brown the sausage and set aside

  2. Add a tiny bit of olive oil. Add onion and garlic. Cook until onion is translucent.

  3. Pour in chicken broth and Italian seasoning bring to a boil

  4. Add turnips and simmer until turnips are tender.

  5. Add sausage and bacon back into the pot.

  6. Pour in coconut milk.

  7. Add kale and simmer until kale is tender.
