Every time I think of meatloaf I think of all of the books and shows I've watched were people dread eating it. Well its actually one of my favorite keto meals to make because it is so good!
The recipe I made is adapted for one of my favorite hunters, Eva Shockey. Her recipe was not keto so I made the changes.
Ingredients
Meatloaf:
2lb of ground of beef
1 cup of crushed pork rinds
1/2 cup of sugar free BBQ sauce (I use Primo Keto)
1/4 cup cheese
1 egg
1 tbsp of worcestershire sauce
2 tsp minced garlic
2 tbsp dried parsley
1 tsp onion powder
1/2 tsp each dried baisl and oregano
salt and pepper
Glaze:
1/3 cup sugar free ketcup
1/3 cup sweetener of choice
1/4 cup apple cider vinegar
Directions
Preheat oven to 350
pray a loaf pan with non stick spray
Mix all ingredients (except for the glaze) by hand in a large bowl. Becareful not to over mix
In a separate small bowl, mix together the glaze ingredients.
Pour 1/2 of the glaze into the bottom of the loaf pan
Put the meat mixture into the loaf pan so its fills the pan evenly
Spread remaining glaze mixture over the top of the meatloaf
Baker for one hour or until the internal temp reaches 165
Let stand before slicing
