I love anything to do with pumpkin anything. Since fall started all I can think about is pumpkin pie. I don't want to make a full pumpkin pie since it would be me eating it and I am still working on not binge eating. I decided to make just a mug cake pumpkin pie.
Ingredients
1/3 Cup pumpkin puree
1 Large egg
2 Tbsp sweetener
1 Tsp pumpkin pie spice
1/2 Tsp vanilla
1/4 Tsp salt
1 Tbsp Heavy Whipping Cream
Keto cookies crushed (optional)
Directions
In a bowl whisk together all the ingredients except the cookies.
Grease a microwave safe dish. Lay crumbled cookies on the bottom of the dish.
Pour pumpkin mixture into dish.
Microwave for 2 minutes. Let cool and top with heavy whipping cream.
