Pumpkin Pie Mug Cake

I love anything to do with pumpkin anything. Since fall started all I can think about is pumpkin pie. I don't want to make a full pumpkin pie since it would be me eating it and I am still working on not binge eating. I decided to make just a mug cake pumpkin pie.


Ingredients

  • 1/3 Cup pumpkin puree

  • 1 Large egg

  • 2 Tbsp sweetener

  • 1 Tsp pumpkin pie spice

  • 1/2 Tsp vanilla

  • 1/4 Tsp salt

  • 1 Tbsp Heavy Whipping Cream

  • Keto cookies crushed (optional)

Directions

  1. In a bowl whisk together all the ingredients except the cookies.

  2. Grease a microwave safe dish. Lay crumbled cookies on the bottom of the dish.

  3. Pour pumpkin mixture into dish.

  4. Microwave for 2 minutes. Let cool and top with heavy whipping cream.
